The first chapter in our mixed fermentation project featuring Brettanomyces and lactobacillus.
Patience is key to this complex marriage of wild yeast, bacteria and fruit.
Brewed with Pilsner malt and wheat. Fermented with wild yeast and souring bacteria.
Rested on cherries for a 5 month secondary fermentation.
No Culture No 1. is a funky, sour and fruity ale meant to be savored.
